3 oz Sushi-grade salmon
4 oz Cooked shrimp
0.25 cup Cooked sushi rice
2 sheets Nori seaweed sheets

0.5 cup Cucumber
1 tbsp Rice vinegar
1 tbsp Coconut aminos
0.25 tsp Sea salt
0.25 tsp Wasabi paste
PREPARATION
In a small bowl, fold the rice vinegar and sea salt into the cooked sushi rice until well combined.
Slice the sushi-grade salmon into long, thin strips and cut the cucumber into matchsticks.
Lay one nori sheet on a bamboo rolling mat and spread half of the rice in a thin, even layer, leaving the top inch clear.
Arrange half of the salmon, shrimp, cucumber, and avocado in a horizontal line across the center of the rice.
Roll the nori tightly from the bottom using the mat, then repeat with the second sheet and remaining ingredients.
Slice each roll into six pieces using a sharp, wet knife and serve with coconut aminos and wasabi paste.
