PREPARATION
Heat one tablespoon of olive oil in a non-stick skillet over medium heat.
Add the cubed sweet potatoes to the skillet and sauté until tender and slightly browned, about 10-12 minutes, then remove and set aside.
In the same skillet, add the crumbled turkey sausage and cook until fully browned.
Add the fresh spinach to the skillet and sauté until just wilted, then remove the sausage and spinach mixture and set aside.
