6 oz Wild Atlantic Salmon
150g Sweet Potato
100g Green Beans
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic
PREPARATION
Peel and cube the sweet potato, then place in a pot of boiling water and cook until tender, about 12 minutes.
Drain the sweet potatoes and mash them thoroughly, adding a splash of water or unsweetened almond milk if needed for a smooth consistency.
Trim the ends of the green beans and mince the garlic cloves.
Heat half of the olive oil in a skillet over medium heat, add the green beans and garlic, and sauté for 5-7 minutes until tender-crisp.
Season the salmon fillet with a pinch of salt and pepper.
Heat the remaining olive oil in a separate non-stick pan over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is golden and crispy.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
Plate the sweet potato mash and green beans alongside the salmon, finishing with a sprinkle of flaky sea salt.
