Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared wild salmon served over a creamy sweet potato mash with garlic green beans, finished with a squeeze of bright lemon.
INGREDIENTS
7 ounces Wild Salmon Fillet
120 grams Sweet Potato
100 grams Green Beans
1 teaspoon Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in water until tender, about 10-12 minutes.
Drain the sweet potato and mash until smooth, seasoning with a pinch of sea salt.
Season the salmon fillet with sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the exterior is golden.
Remove the salmon from the pan and set aside.
Add the remaining oil to the same skillet along with minced garlic and green beans.
Sauté the beans for 3-4 minutes until they are vibrant and crisp-tender.
Plate the salmon over the sweet potato mash and serve with the garlic green beans on the side.
