Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served with garlic-infused green beans and a side of velvety sweet potato mash.
INGREDIENTS
7 ounces Wild Salmon Fillet
120 grams Sweet Potato
100 grams Green Beans
1.5 teaspoons Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water until tender, approximately 10 to 12 minutes.
Drain the water and mash the sweet potato until smooth, adding a pinch of sea salt if desired.
Season the salmon fillet with salt and pepper on both sides.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4 to 5 minutes per side until the exterior is golden and the fish is cooked through.
Remove the salmon from the pan and set aside.
Add the remaining olive oil to the same skillet and toss in the green beans and minced garlic.
Sauté the beans for 4 to 6 minutes until they are tender-crisp and the garlic is fragrant.
Serve the seared salmon immediately alongside the sweet potato mash and garlic green beans.
