Seared Salmon with Roasted Sweet Potato and Steamed Broccoli
Pan-seared salmon served with roasted sweet potato and steamed broccoli, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
2.4 oz Wild Atlantic Salmon Fillet
180g Sweet Potato
100g Broccoli Florets
2.5 tsp Extra Virgin Olive Oil
1 tbsp Fresh Lemon Juice
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Peel and cube the sweet potato into 1/2-inch pieces, then toss with 1.5 teaspoons of olive oil and a pinch of salt.
Spread the potatoes on the baking sheet and roast for 20 to 25 minutes until tender and lightly browned.
While potatoes roast, place broccoli florets in a steamer basket over boiling water and steam for 5 minutes until tender-crisp.
Season the salmon fillet with salt and pepper on both sides.
Heat the remaining teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4 minutes, then flip and cook for another 3 to 4 minutes until golden.
Serve the seared salmon alongside the roasted potatoes and broccoli, finishing with a fresh squeeze of lemon juice.
