100g Broccoli Florets
150g Cauliflower Florets
1.25 tbsp Olive Oil
1 clove Garlic
PREPARATION
Preheat your oven to 400°F (200°C).
Toss the broccoli florets with a quarter tablespoon of olive oil and a pinch of sea salt, then spread them on a baking sheet and roast for 15-20 minutes until the edges are charred.
Steam the cauliflower and the garlic clove together until the cauliflower is very tender, approximately 10-12 minutes.
Drain the cauliflower well and mash or blend it with another quarter tablespoon of olive oil, salt, and pepper until it reaches a smooth consistency.
Season the salmon fillet with salt and pepper.
Heat the remaining three-quarters tablespoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side up in the pan and sear for 4-5 minutes, then flip and cook for another 3-4 minutes until the center is just opaque.
