PREPARATION
Heat a non-stick skillet over medium heat and cook the turkey bacon until crisp.
Remove the bacon and chop into small pieces.
Add half the olive oil to the pan and sauté the spinach until wilted, then set aside.
Wipe the pan and add the remaining olive oil.
Pour in the egg whites and cook undisturbed until the edges begin to set.
