Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet served alongside a smooth sweet potato mash and green beans finished with a fragrant garlic crunch.
INGREDIENTS
5.5 ounces Wild Atlantic Salmon
120 grams Sweet Potato
1 cup Green Beans
1 teaspoon Avocado Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water until fork-tender.
Drain the sweet potato and mash thoroughly until smooth, adding a pinch of sea salt if desired.
Heat half of the avocado oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then place it in the skillet skin-side up.
Sear the salmon for 4-5 minutes per side until the exterior is golden and the center is just opaque.
Remove the salmon from the pan and set aside to rest.
Add the remaining avocado oil to the same skillet along with the green beans and minced garlic.
Sauté the green beans for 3-4 minutes until they are bright green and crisp-tender.
Plate the seared salmon over the sweet potato mash and serve with the garlic green beans.
