Seared Salmon with Steamed Green Beans and Cauliflower Mash
Pan-seared salmon fillet served over a creamy garlic cauliflower mash with a side of crisp steamed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 oz Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Green Beans
2 tsp Extra Virgin Olive Oil
1.5 tbsp Non-fat Greek Yogurt
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets and minced garlic until very tender, about 10-12 minutes.
While cauliflower steams, place green beans in a separate steamer basket and steam for 5-7 minutes until bright green and crisp-tender.
Transfer the steamed cauliflower and garlic to a blender or food processor, add the Greek yogurt and 1 teaspoon of olive oil, and blend until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season with a pinch of salt and pepper.
Heat the remaining 1 teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
Plate the cauliflower mash, top with the seared salmon, and serve with the steamed green beans on the side.
