5.5 oz Wild Salmon Fillet
2.5 cups Cauliflower florets
1 cup Fresh Green Beans
3 tbsp Nonfat Plain Greek Yogurt
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until crisp-tender.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
Transfer the steamed cauliflower to a bowl or food processor, adding the Greek yogurt, minced garlic, and the remaining olive oil.
Mash or process the cauliflower until smooth and creamy, seasoning with salt and pepper to taste.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve with the steamed green beans on the side.
