7 oz Wild Salmon Fillet
2 cups Cauliflower florets
1 cup Fresh Green Beans
2 tsp Ghee
1 clove Garlic
1 tsp Lemon Juice
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket and cook until they are bright green and crisp-tender.
Transfer the steamed cauliflower to a bowl and mash thoroughly with minced garlic and one teaspoon of ghee until reaching a smooth, creamy consistency.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the remaining teaspoon of ghee in a non-stick skillet over medium-high heat.
Place the salmon in the hot skillet skin-side up and sear for 4 minutes until a golden crust forms.
Flip the salmon and cook for an additional 3 to 4 minutes until the fish is opaque and flakes easily with a fork.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the green beans on the side with a fresh squeeze of lemon juice.
