Sichuan Pork Dan Dan Noodles
Sautéed ground pork and tender soba noodles tossed in a creamy, spicy tahini sauce with vibrant bok choy and a numbing Sichuan kick.
INGREDIENTS
7 oz Ground pork (93% lean)
1.5 oz Soba noodles
0.5 tbsp Tahini
1 tbsp Tamari
1 tsp Chili oil
1 cup Baby bok choy
0.25 tsp Sichuan peppercorns
1 tsp Garlic
1 tsp Ginger
2 tbsp Water
1 tbsp Green onions
PREPARATION
Boil water and cook soba noodles according to package directions, adding the baby bok choy in the last minute of cooking.
Drain the noodles and bok choy then set them aside.
In a small bowl, whisk together tahini, tamari, chili oil, ground Sichuan peppercorns, and water until the sauce is smooth.
Heat a non-stick skillet over medium-high heat and brown the ground pork until fully cooked and slightly crispy.
Add minced garlic and ginger to the pork, sautéing for 1 minute until fragrant.
Lower the heat and stir in the tahini sauce mixture, coating the pork evenly.
Add the cooked noodles and bok choy to the skillet, tossing gently to combine all ingredients.
Garnish with sliced green onions and serve immediately.
