Air Fryer Eggs with Roasted Broccoli and Edamame
Protein-rich egg whites air-fried with a vibrant mix of roasted broccoli, cauliflower rice, and sweet corn for a savory and satisfyingly crisp texture.
INGREDIENTS
2.5 cups liquid egg whites
2 cups frozen broccoli florets
1 cup cauliflower rice
0.5 cup frozen corn
1 cup edamame in the shell
1 tbsp avocado oil
0.5 whole avocado
0.5 tsp sea salt
0.5 tsp black pepper
0.5 tsp garlic powder
PREPARATION
Preheat your air fryer to 350°F (175°C).
Grease a large air-fryer-safe baking dish with half of the avocado oil.
Toss the frozen broccoli, cauliflower rice, and corn in the dish with the remaining avocado oil.
Air fry the vegetable mixture for 7 minutes to thaw and begin the roasting process.
In a medium bowl, whisk together the liquid egg whites, sea salt, black pepper, and garlic powder until well combined.
Pour the egg white mixture over the roasted vegetables in the baking dish.
Place the edamame in the shell in a small corner of the air fryer basket or a separate small tray.
Air fry the egg bake and edamame together for 15 to 18 minutes, or until the eggs are fully set and the edges are slightly golden.
Remove from the air fryer and let rest for 2 minutes.
Top the egg bake with sliced avocado and serve the roasted edamame on the side.
