Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served over a velvety sweet potato mash with garlic-infused green beans, finished with a squeeze of bright lemon.
INGREDIENTS
5 oz Salmon Fillet
150g Sweet Potato
100g Green Beans
1 tsp Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil or steam until fork-tender.
Drain the sweet potato and mash until smooth, adding a splash of water or unsweetened almond milk if needed for consistency.
Season the salmon fillet with a pinch of sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes per side until the skin is crisp and the fish is cooked through.
In a separate small skillet, heat the remaining olive oil and sauté the minced garlic and green beans for 3-5 minutes until tender-crisp.
Plate the salmon over the sweet potato mash and serve with the garlic green beans on the side.
