PREPARATION
Preheat your grill or grill pan to medium-high heat.
In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, lemon zest, minced garlic, dried oregano, sea salt, and black pepper to create the marinade.
Slice the zucchini lengthwise into 1/2-inch thick planks.
