Garlic Herb Roasted Chicken Thighs
Tender boneless chicken thighs roasted with a fragrant garlic-herb rub, paired with blistered green beans for a clean and satisfying dinner.
INGREDIENTS
8 oz boneless skinless chicken thighs
1 tbsp extra virgin olive oil
3 cloves garlic
1 tsp fresh rosemary
1 tsp fresh thyme
0.5 tsp sea salt
0.25 tsp black pepper
1.5 cups fresh green beans
1 tsp lemon juice
PREPARATION
Preheat your oven to 400°F and line a large rimmed baking sheet with parchment paper for easy cleanup.
In a small bowl, mince the garlic and finely chop the fresh rosemary and thyme.
Combine the minced garlic, herbs, half of the olive oil, sea salt, and black pepper in the bowl and mix well.
Pat the chicken thighs dry with a paper towel and rub the herb mixture evenly over all sides of the meat.
Place the chicken on one side of the prepared baking sheet.
Toss the trimmed green beans with the remaining olive oil and a pinch of salt, then spread them in a single layer on the other side of the sheet.
Roast in the oven for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165°F and the green beans are tender and slightly charred.
Remove from the oven and drizzle the fresh lemon juice over the chicken and vegetables before serving hot.
