Buffalo Cauliflower and Chicken Bites
Oven-roasted cauliflower and tender chicken breast tossed in a zesty buffalo sauce, served with a creamy and pungent blue cheese Greek yogurt dip.
INGREDIENTS
4 oz Chicken breast
2 cup Cauliflower florets
2 tbsp Buffalo sauce
0.5 cup Nonfat Greek yogurt
1 tbsp Blue cheese crumbles
1 tsp Olive oil
0.25 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Lemon juice
PREPARATION
Preheat oven to 400°F and line a baking sheet with parchment paper.
Cut the chicken breast into bite-sized pieces and chop the cauliflower into small florets.
In a large bowl, toss the chicken and cauliflower with olive oil, garlic powder, sea salt, and black pepper.
Spread the mixture onto the baking sheet and roast for 20 minutes until the chicken is cooked through and cauliflower is tender.
While roasting, whisk together the Greek yogurt, blue cheese crumbles, and lemon juice in a small bowl to create the dip.
Remove the tray from the oven and toss the chicken and cauliflower bites in the buffalo sauce until well coated.
Serve the warm buffalo bites immediately with the chilled blue cheese dip on the side.
