PREPARATION
Thinly slice the yellow onion. In a small non-stick skillet, heat the olive oil over medium-low heat. Add the onions and a pinch of salt, cooking slowly for 12-15 minutes until soft and deeply caramelized.
While onions cook, place the bacon slices in a separate cold skillet. Turn the heat to medium and cook until the bacon is crisp. Remove and drain on a paper towel.
Divide the ground beef into two 3-ounce portions and shape them into very thin, wide patties. Season both sides evenly with sea salt and black pepper.
