4 whole Dumpling wrappers

1 tsp Unflavored gelatin
1 tbsp Fresh ginger
2 cloves Garlic
2 tbsp Green onions
1 tbsp Tamari
0.25 tsp Toasted sesame oil
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Rice vinegar
PREPARATION
Bloom the gelatin in cold chicken bone broth for 5 minutes then heat gently until fully dissolved.
Pour the broth into a shallow container and refrigerate for 2 hours until it sets into a firm jelly.
Finely mince the chilled broth jelly into tiny cubes and set aside in the refrigerator.
In a medium bowl combine the ground pork with minced ginger garlic green onions tamari sesame oil salt and pepper.
Gently fold the broth jelly cubes into the pork mixture until evenly distributed.
Place a small spoonful of the filling in the center of each dumpling wrapper.
Moisten the edges of the wrapper with water and pleat the sides upward pinching the top to create a tight seal.
Line a steamer basket with parchment paper and steam the dumplings over boiling water for 8 to 10 minutes.
