Ginger Chicken Fried Rice with Vegetables
Sautéed chicken breast and crisp vegetables are tossed with nutty brown rice and aromatic ginger for a vibrant, protein-packed meal.
INGREDIENTS
4.5 oz chicken breast
0.5 cup cooked brown rice
1 large egg
0.5 cup broccoli florets
0.25 cup carrots
0.25 cup frozen peas
1 tsp fresh ginger
1 clove garlic
1 tbsp tamari
0.5 tsp toasted sesame oil
1 tbsp green onions
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Dice the chicken breast into small, bite-sized pieces and season with sea salt and black pepper.
Whisk the egg in a small bowl. Heat a non-stick skillet over medium heat, lightly scramble the egg, and set aside.
In the same skillet, add the toasted sesame oil. Sauté the chicken pieces until golden brown and cooked through, about 5-6 minutes.
Add the minced ginger, garlic, chopped broccoli, and diced carrots to the skillet. Cook for 3-4 minutes until the vegetables are tender-crisp.
Stir in the cooked brown rice, frozen peas, scrambled egg, and tamari. Toss everything together for 2 minutes over medium-high heat to allow the flavors to meld and the rice to lightly crisp.
Garnish with sliced green onions and serve immediately.
