Seared Salmon with Steamed Green Beans and Garlic Cauliflower Mash
Pan-seared salmon served over a velvety garlic cauliflower mash with a side of crisp-tender steamed green beans.
INGREDIENTS
7 ounces Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Green Beans
2 teaspoons Extra Virgin Olive Oil
1 tablespoon Non-fat Greek Yogurt
1 clove Garlic
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until they are very tender, approximately 10-12 minutes.
During the final 5 minutes of steaming the cauliflower, add the green beans to the steamer basket and cook until they are bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides lightly with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4 minutes until the skin is golden.
Flip the salmon fillet and continue cooking for another 3-4 minutes until the center is just opaque and the exterior is perfectly seared.
Transfer the steamed cauliflower to a blender or bowl and combine with the Greek yogurt and minced garlic, mashing or blending until the texture is smooth and velvety.
Plate the garlic cauliflower mash as a base, top with the seared salmon, and serve the steamed green beans on the side.
