Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over a bed of whipped cauliflower and garlic-sautéed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon Fillet
2 cups Cauliflower florets
1 cup Fresh Green Beans
2 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Fresh Lemon Juice
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very tender.
While cauliflower cooks, trim the ends of the green beans and mince the garlic.
Pat the salmon fillet dry with a paper towel and season with a pinch of salt and pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until golden and cooked through.
In a separate small skillet, heat the remaining teaspoon of olive oil over medium heat and sauté the green beans for 5-6 minutes, adding the garlic in the last minute of cooking.
Transfer the steamed cauliflower to a blender or food processor and pulse with a pinch of salt until smooth and whipped.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side.
Finish the entire dish with a fresh squeeze of lemon juice.
