Seared Salmon with Garlic Green Beans and Quinoa
Pan-seared salmon served over fluffy quinoa with garlic-sautéed green beans, finished with a squeeze of fresh lemon and a sprinkle of flaky sea salt.
INGREDIENTS
3.5 oz Salmon Fillet
0.5 cup Cooked Quinoa
1.25 cups Fresh Green Beans
1.5 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Rinse the quinoa thoroughly and cook according to package instructions until fluffy.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 3-4 minutes until golden.
In a separate small skillet, heat the remaining olive oil over medium heat and add the green beans and minced garlic.
Sauté the green beans for 5-6 minutes until tender-crisp and the garlic is fragrant.
Plate the salmon over the bed of quinoa and serve with the garlicky green beans and a fresh lemon wedge.
