Seared Salmon with Garlicky Green Beans and Herb-Cauliflower Mash
Pan-seared salmon fillet served with garlicky sautéed green beans and a herb-cauliflower mash, finished with a bright squeeze of zesty lemon.
INGREDIENTS
6 oz Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Green Beans
3 tbsp Nonfat Greek Yogurt
1 tsp Extra Virgin Olive Oil
2 cloves Garlic
1 tbsp Fresh Parsley
1 tsp Lemon Juice
PREPARATION
Steam the cauliflower florets until they are fork-tender and easily pierced.
Mash the steamed cauliflower with nonfat Greek yogurt and chopped fresh parsley until the texture is creamy and smooth.
Heat the olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with salt and pepper then sear it for about four minutes on each side until the skin is crispy and the center is flaky.
Remove the salmon from the pan and add the green beans and minced garlic to the remaining juices.
Sauté the green beans for three to five minutes until they are tender-crisp and the garlic is fragrant.
Serve the seared salmon over a bed of the herb-cauliflower mash with the garlicky green beans on the side and a squeeze of lemon.
