PREPARATION
Preheat your oven to 375°F (190°C) and lightly grease a small oven-safe baking dish.
Bring a pot of salted water to a boil and cook the chickpea ziti for 2 minutes less than the package directions suggest for al dente, then drain.
Heat the olive oil in a skillet over medium heat and sauté the diced onion and minced garlic until translucent and fragrant.
Add the ground turkey to the skillet, seasoning with sea salt and black pepper, and cook until browned and crumbled.
Stir in the marinara sauce and dried oregano, then fold in the fresh baby spinach until it just begins to wilt.
Remove the skillet from the heat and toss the cooked ziti into the meat and sauce mixture until well coated.
Transfer half of the pasta mixture into the baking dish, add dollops of the ricotta cheese across the layer, and top with the remaining pasta.
