PREPARATION
Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
In a small bowl, mince the garlic and combine it with half of the olive oil, rosemary, thyme, sea salt, and black pepper.
Place the chicken breast on the prepared baking sheet and rub the garlic-herb mixture evenly over both sides.
In a separate bowl, toss the broccoli florets and sliced carrots with the remaining olive oil and a pinch of salt.
Spread the vegetables in a single layer around the chicken on the baking sheet.
Roast for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165°F and the vegetables are tender.
