200g Sweet Potato, peeled and cubed
150g Fresh Green Beans, trimmed

PREPARATION
Place the cubed sweet potatoes in a pot of boiling water and cook until tender, about 10-12 minutes.
Drain the sweet potatoes and mash them with the ghee and a pinch of sea salt until smooth.
While potatoes cook, heat half of the olive oil in a skillet over medium heat.
Add the green beans and minced garlic to the skillet, sautéing until the beans are tender-crisp and slightly charred.
Remove the beans from the skillet and set aside.
Increase the heat to medium-high and add the remaining olive oil to the same skillet.
Season the tuna steak with salt and pepper, then sear for 1-2 minutes per side for a perfect medium-rare.
