1.5 oz Whole wheat angel hair pasta
0.5 tbsp Extra virgin olive oil
3 cloves Garlic
1 cup Zucchini
0.5 tsp Red pepper flakes
1 tbsp Lemon juice
1 tbsp Fresh parsley
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Bring a large pot of salted water to a boil and cook the angel hair pasta according to package directions until al dente.
While the pasta cooks, heat the olive oil in a large skillet over medium heat.
Season the shrimp with sea salt and black pepper.
Add the shrimp to the skillet and cook for 2 minutes per side until pink and opaque, then remove and set aside.
In the same skillet, add the minced garlic and red pepper flakes, sautéing for 1 minute until fragrant.
Add the spiralized zucchini to the skillet and toss for 2 minutes until slightly softened.
Return the shrimp to the pan along with the cooked pasta and a small splash of pasta water.
Drizzle with lemon juice and toss everything together until well combined and heated through.
