6.5 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
1 tsp Olive Oil
1 tbsp Non-fat Greek Yogurt
1 clove Garlic
Salt and Pepper to taste

PREPARATION
Place the cauliflower florets and garlic clove in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until bright green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
Transfer the steamed cauliflower and garlic to a bowl or food processor, add the Greek yogurt, and mash or blend until creamy.
Plate the garlic cauliflower mash, top with the seared salmon, and serve alongside the steamed green beans with a fresh lemon wedge.
