Ground Beef Stuffed Bell Peppers
Bell peppers roasted until tender and filled with a savory blend of lean ground beef and aromatic herbs in a rich tomato sauce. The vibrant colors pop against the melted cheese topping.
INGREDIENTS
7 oz 93% lean ground beef
1.75 large bell peppers
0.5 cup tomato puree
0.5 tsp olive oil
0.25 cup yellow onion
1 clove garlic
0.25 oz grated parmesan cheese
0.5 tsp dried oregano
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Preheat your oven to 375°F. Slice the tops off the bell peppers and carefully remove the seeds and internal ribs.
Heat the olive oil in a large skillet over medium heat. Add the diced yellow onion and sauté until translucent, approximately 4 minutes.
Add the ground beef to the skillet, breaking it into small crumbles with a wooden spoon. Cook until the beef is fully browned and no pink remains.
Stir in the minced garlic, dried oregano, sea salt, and black pepper. Cook for 1 minute until the spices are fragrant.
Pour the tomato puree into the skillet with the beef. Simmer the mixture for 5 minutes on low heat to allow the sauce to thicken slightly.
Stand the hollowed bell peppers upright in a baking dish. Spoon the beef and tomato mixture evenly into each pepper cavity.
Top each stuffed pepper with the grated parmesan cheese.
Pour 1/4 cup of water into the bottom of the baking dish to create steam. Cover the dish tightly with foil and bake for 30 minutes.
Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is golden and bubbling.
