Satay Tofu Skewers with Peanut Sauce
Grilled extra-firm tofu marinated in aromatic spices and served with a velvety, protein-packed peanut sauce alongside vibrant steamed edamame.
INGREDIENTS
10 oz extra firm tofu
1 tbsp creamy peanut butter
0.25 cup nonfat plain Greek yogurt
0.5 cup shelled edamame
1 tbsp tamari
1 tbsp lime juice
1 tsp fresh ginger
1 clove garlic
0.5 tsp turmeric
0.5 tsp ground coriander
0.25 tsp red pepper flakes
1 tsp honey
0.5 tsp toasted sesame oil
PREPARATION
Press the extra-firm tofu for 15 minutes to remove excess moisture, then cut into uniform 1-inch cubes.
In a small bowl, whisk together the tamari, lime juice, grated fresh ginger, minced garlic, turmeric, ground coriander, and toasted sesame oil.
Toss the tofu cubes in half of the prepared marinade and let sit for 10 minutes while preheating a grill pan or outdoor grill to medium-high heat.
Thread the marinated tofu onto wooden skewers and grill for 3-4 minutes per side until charred and golden brown.
Prepare the satay sauce by mixing the remaining marinade with the creamy peanut butter, Greek yogurt, honey, and red pepper flakes until smooth.
Steam the shelled edamame in a small amount of water until tender and bright green.
Serve the hot tofu skewers drizzled with the creamy peanut sauce and the steamed edamame on the side.
