Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with garlic-infused cauliflower mash and tender steamed green beans, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
7 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green Beans
2 cloves Garlic, minced
0.5 tsp Extra Virgin Olive Oil
1 tbsp Nonfat Greek Yogurt
Fresh lemon wedge, sea salt, and black pepper to taste
PREPARATION
Place cauliflower florets and minced garlic in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Add the green beans to the steamer for the last 5 minutes of cooking until they are bright green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 3 minutes until cooked through.
Transfer the steamed cauliflower and garlic to a bowl, add the Greek yogurt, and mash with a fork or immersion blender until smooth and creamy.
Plate the garlic mashed cauliflower alongside the salmon and steamed green beans, serving with a fresh lemon wedge for a zesty finish.
