PREPARATION
Heat the olive oil in a medium non-stick skillet over medium heat.
Slice the turkey sausage into thin rounds and add them to the skillet, cooking until browned and heated through.
Add the baby spinach to the pan and sauté for about 1 minute until just wilted, then remove the sausage and spinach and set aside.
