Baked Berry French Toast Casserole
Sprouted grain bread cubes soaked in a protein-rich custard and baked with juicy mixed berries for a comforting, golden-brown finish.
INGREDIENTS
3 slices sprouted grain bread
0.5 cup liquid egg whites
1 large egg
0.5 cup non-fat Greek yogurt
0.5 cup mixed berries
0.5 tsp ground cinnamon
1 tsp vanilla extract
1 tbsp monk fruit sweetener
0.13 tsp sea salt
PREPARATION
Preheat your oven to 350°F and lightly grease a small oven-safe baking dish with a light coating of cooking spray.
Slice the sprouted grain bread into uniform 1-inch cubes and distribute them evenly in the prepared baking dish.
In a medium bowl, whisk together the liquid egg whites, whole egg, half of the Greek yogurt, cinnamon, vanilla, monk fruit sweetener, and sea salt until the mixture is smooth and frothy.
Pour the egg custard evenly over the bread cubes, using a spoon or spatula to press the bread down so every piece is fully submerged and starts to absorb the liquid.
Scatter the mixed berries over the top of the bread, gently pressing a few into the custard for even distribution.
Bake for 25 to 30 minutes, or until the casserole has puffed up, the center is set, and the top is a light golden-brown.
Remove from the oven and let it rest for 5 minutes before serving with the remaining dollop of Greek yogurt on top.
