6 oz Wild Atlantic Salmon
2 oz Brown Rice Pasta
1.5 cups Broccoli Florets
2 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 tbsp Fresh Lemon Juice
PREPARATION
Bring a large pot of salted water to a boil and cook the brown rice pasta according to package directions until al dente.
While the pasta cooks, heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Pat the salmon dry with a paper towel and season with salt and pepper.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until flaky.
Remove the salmon from the pan and set aside.
Add the remaining teaspoon of olive oil to the same skillet and sauté the minced garlic and broccoli florets for 3-5 minutes until tender-crisp.
Drain the pasta, reserving two tablespoons of pasta water.
Toss the pasta and broccoli together with the lemon juice and reserved pasta water to create a light coating.
Serve the seared salmon over the pasta and broccoli mixture.
