Preheat your oven to 425°F and line a large baking sheet with parchment paper.
Peel the sweet potato and cut it into 1/2-inch thick fries or wedges.
In a large bowl, toss the sweet potato fries with olive oil, smoked paprika, garlic powder, and half of the sea salt and black pepper until evenly coated.
Arrange the fries in a single layer on the prepared baking sheet, ensuring they do not overlap.
Roast for 20-25 minutes, flipping the fries halfway through, until they are tender and the edges are slightly browned.
While the fries are roasting, heat a non-stick skillet over medium-high heat and add the ground turkey.
Season the turkey with the remaining sea salt and black pepper, breaking it up with a spatula and cooking until fully browned and cooked through.
In a small bowl or jar, whisk together the lime juice and honey until the honey is fully dissolved.
Transfer the roasted sweet potato fries to a plate and top with the cooked ground turkey.
Drizzle the honey-lime mixture over the top and garnish with fresh chopped cilantro before serving.
