Seared Salmon Fillet with Steamed Green Beans and Cauliflower Mash
Pan-seared wild salmon served over a creamy garlic cauliflower mash with a side of crisp-tender green beans and a hint of bright lemon.
INGREDIENTS
6 oz Wild Sockeye Salmon
2.5 cups Cauliflower florets
1.5 cups Green beans
2 tbsp Nonfat Greek yogurt
2 tsp Olive oil
0.5 tsp Ghee
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very tender.
Transfer the steamed cauliflower to a food processor or bowl and blend with the Greek yogurt, ghee, salt, and pepper until smooth and creamy.
Steam the green beans for 4-5 minutes until they are bright green and reach a crisp-tender texture.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the hot skillet skin-side up and sear for 4 minutes, then flip and cook for another 3-4 minutes until the desired doneness is reached.
Serve the seared salmon over a generous bed of cauliflower mash with the steamed green beans on the side.
