Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served over a bed of garlic-infused cauliflower mash with a side of vibrant, crisp steamed green beans.
INGREDIENTS
6 ounces Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
1 teaspoon Olive oil
1 tablespoon Non-fat Greek yogurt
1 clove Garlic
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very tender.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket and cook until bright green and crisp-tender.
Transfer the steamed cauliflower to a food processor or bowl along with the minced garlic and Greek yogurt, then blend or mash until smooth and creamy.
Heat the olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with a pinch of salt and pepper and place it in the skillet skin-side down.
Sear the salmon for 4-5 minutes per side until the skin is crispy and the fish is cooked to your preferred level of doneness.
Serve the seared salmon immediately over the garlic cauliflower mash with the steamed green beans on the side.
