PREPARATION
Season the chicken breast with half of the sea salt and black pepper.
Heat a grill pan or skillet over medium heat with half of the olive oil and cook the chicken for 5-6 minutes per side until fully cooked, then slice into thin strips.
Brush the outside of the sourdough slices with the remaining olive oil.
Layer one slice of bread with the sliced chicken, fresh mozzarella, tomato slices, and fresh basil leaves.
Sprinkle the remaining sea salt and black pepper over the tomatoes.
Top with the second slice of bread and place the sandwich onto the grill pan over medium heat.
Grill for 3-4 minutes per side, pressing down slightly with a heavy skillet, until the bread is golden brown and the cheese has melted.
