Seared Salmon with Steamed Green Beans and Cauliflower Mash
Pan-seared salmon fillet served over creamy cauliflower mash with vibrant steamed green beans, finished with a squeeze of fresh lemon for a bright, zesty zing.
INGREDIENTS
6 oz Wild Atlantic Salmon fillet
2 cups Cauliflower florets
1 cup Fresh green beans
1.5 tbsp Non-fat plain Greek yogurt
1 tbsp Fresh lemon juice
1 tsp Garlic powder
Pinch of sea salt and black pepper
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
In the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until they are bright green and crisp-tender.
Season the salmon fillet with garlic powder, sea salt, and black pepper.
Heat a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes, then flip and cook for another 3-4 minutes until opaque and flaky.
Transfer the steamed cauliflower to a bowl and mash with the Greek yogurt and a pinch of salt until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve the green beans on the side.
Drizzle the entire dish with fresh lemon juice before serving.
