Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served over creamy garlic-infused cauliflower mash and crisp-tender steamed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 ounces Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
1 teaspoon Olive oil
1 teaspoon Ghee
2 tablespoons Non-fat Greek yogurt
2 cloves Garlic
PREPARATION
Place cauliflower florets and peeled garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
Add the green beans to the steamer during the last 5 minutes of cooking until they are bright green and crisp-tender.
Transfer the steamed cauliflower and garlic to a food processor or bowl and blend with non-fat Greek yogurt and ghee until smooth and creamy.
Season the salmon fillet with salt and pepper then heat olive oil in a non-stick skillet over medium-high heat.
Sear the salmon skin-side down for 4-5 minutes then flip and cook for another 2-3 minutes until the exterior is golden and the center is just opaque.
Plate the garlic mashed cauliflower and top with the seared salmon then serve alongside the steamed green beans.
