Seared Pork Chops with Garlic Green Beans and Mashed Cauliflower
Pork chops seared until golden, served with creamy mashed cauliflower and green beans sautéed with fragrant garlic.
INGREDIENTS
6 oz Boneless Pork Loin Chops
2 cups Cauliflower Florets
1.5 cups Fresh Green Beans
2 tbsp Nonfat Plain Greek Yogurt
1 tsp Avocado Oil
1 tsp Ghee
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a basket over boiling water for 10-12 minutes until very tender.
While cauliflower steams, season the pork chops generously with salt, pepper, and your favorite dried herbs.
Heat avocado oil in a heavy skillet over medium-high heat and sear the pork chops for 4-5 minutes per side until the internal temperature reaches 145°F.
Remove pork from the skillet and let it rest for 5 minutes to keep the juices intact.
In the same skillet, add half of the ghee and the green beans, sautéing for 5 minutes before adding the minced garlic for the final minute of cooking.
Transfer the steamed cauliflower to a bowl and mash with the remaining ghee and Greek yogurt until smooth and creamy.
Plate the seared pork chops alongside the garlic green beans and a generous scoop of cauliflower mash.
