PREPARATION
Slice the flank steak into thin strips and toss with lime juice, cumin, garlic powder, sea salt, and black pepper.
Heat avocado oil in a cast-iron skillet over medium-high heat and sear the steak strips for 3-4 minutes until browned.
Remove steak from the skillet and wipe it clean; place the tortilla in the pan and sprinkle half the cheddar on one side.
Top the cheese with the cooked steak strips and the remaining cheddar, then fold the tortilla in half.
