Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with garlic-infused cauliflower mash and tender green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 ounces Wild Atlantic Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Fresh Green Beans
2 cloves Garlic
1 teaspoon Extra Virgin Olive Oil
PREPARATION
Bring a pot of water to a boil with a steamer basket inserted.
Add the cauliflower florets and garlic cloves to the steamer basket, cover, and steam for 10-12 minutes until very tender.
Remove the cauliflower and garlic, then add the green beans to the steamer for 4-5 minutes until bright green and crisp-tender.
While the beans steam, place the steamed cauliflower and garlic in a food processor or use a hand masher to blend until smooth, seasoning with a pinch of sea salt.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
Serve the seared salmon alongside the garlic mashed cauliflower and steamed green beans.
