1.5 cup Broccoli florets
4 oz Yukon gold potatoes
1 tbsp Extra virgin olive oil
2 clove Garlic
1 sprig Fresh rosemary
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F (200°C).
Dice the potatoes into half-inch cubes and cut the broccoli into bite-sized florets.
Toss the potatoes and broccoli on a baking sheet with half of the olive oil and a pinch of the salt and pepper.
Roast the vegetables for 20 to 25 minutes until the broccoli is charred and the potatoes are fork-tender.
Season the steak generously on both sides with the remaining salt and pepper.
Heat the remaining olive oil in a cast-iron skillet over medium-high heat until shimmering.
Sear the steak for 4 to 5 minutes per side, adding the smashed garlic cloves and rosemary sprig to the pan during the last 2 minutes of cooking.
Remove the steak from the pan and let it rest for 5 minutes before slicing against the grain to serve.
