PREPARATION
Slice the turkey sausage into small rounds and set aside.
Heat the extra virgin olive oil in a medium non-stick skillet over medium heat.
Add the turkey sausage to the pan and sauté until lightly browned and cooked through.
Add the fresh spinach to the skillet and cook for 1-2 minutes until just wilted, then remove the sausage and spinach from the pan and set aside.
Wipe the skillet if necessary and pour in the egg whites, tilting the pan to ensure they cover the bottom evenly.
