Seared Salmon with Steamed Broccoli and Garlic Mashed Cauliflower
Pan-seared salmon served with tender steamed broccoli and creamy garlic mashed cauliflower, finished with a bright squeeze of zesty lemon.
INGREDIENTS
5.5 oz Salmon Fillet
2.5 cups Cauliflower Florets
1.5 cups Broccoli Florets
3 tbsp Plain Nonfat Greek Yogurt
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Lemon Juice
PREPARATION
Chop the cauliflower into small florets and steam until very tender, about 10 to 12 minutes.
Steam the broccoli florets in a separate steamer basket or during the last 5 minutes of the cauliflower steaming until bright green and tender-crisp.
Transfer the steamed cauliflower to a food processor or bowl along with the minced garlic, Greek yogurt, and half of the olive oil, then blend or mash until creamy.
Pat the salmon fillet dry with a paper towel and season lightly with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4 to 5 minutes until a golden crust forms.
Carefully flip the salmon and cook for another 3 to 4 minutes until the fish is opaque and flakes easily.
Serve the seared salmon immediately alongside the garlic cauliflower mash and steamed broccoli, finished with a fresh squeeze of lemon juice.
