Seared Turkey Cutlets with Garlic Green Beans and Sweet Potato Mash
Pan-seared turkey breast cutlets served with creamy mashed sweet potatoes and green beans sautéed with fragrant, golden garlic.
INGREDIENTS
5 ounces Turkey Breast Cutlets
175 grams Sweet Potato, cubed
1.5 cups Fresh Green Beans
1 tablespoon Extra Virgin Olive Oil
1 tablespoon Non-fat Plain Greek Yogurt
1 clove Garlic, minced
Pinch of sea salt and black pepper
PREPARATION
Place the cubed sweet potato in a pot of boiling water and cook for 10-12 minutes until fork-tender.
While the potatoes cook, season the turkey cutlets on both sides with sea salt and black pepper.
Heat half of the olive oil in a large skillet over medium-high heat.
Add the turkey cutlets to the skillet and sear for 3-4 minutes per side until golden brown and cooked through, then remove and set aside.
In the same skillet, add the remaining olive oil, green beans, and minced garlic.
Sauté the green beans for 5-6 minutes until they are bright green and crisp-tender.
Drain the sweet potatoes and mash them in a bowl with the Greek yogurt and a pinch of salt until smooth and creamy.
Plate the turkey cutlets alongside the sweet potato mash and garlic green beans.
