Classic Baked Ziti with Ricotta
Chickpea pasta and lean ground turkey baked in a vibrant herb-infused marinara sauce with dollops of creamy ricotta cheese.
INGREDIENTS
5 oz ground turkey
1 oz chickpea ziti pasta
2 tbsp part-skim ricotta cheese
0.5 oz shredded part-skim mozzarella cheese
0.5 cup marinara sauce
1 cup fresh baby spinach
1 tsp extra virgin olive oil
1 clove garlic
0.25 tsp sea salt
0.25 tsp black pepper
0.25 tsp dried oregano
1 tbsp fresh basil
PREPARATION
Preheat your oven to 375°F (190°C).
Bring a small pot of salted water to a boil and cook the chickpea ziti for 2 minutes less than the package directions for an al dente texture.
While the pasta cooks, heat the olive oil in a skillet over medium heat. Add the ground turkey and cook until browned, breaking it up with a spoon.
Add the minced garlic, sea salt, black pepper, and dried oregano to the turkey and sauté for 1 minute until fragrant.
Stir in the fresh baby spinach and cook until just wilted, then pour in the marinara sauce and simmer for 2 minutes.
Drain the pasta and toss it directly into the skillet with the turkey and sauce until well coated.
Transfer the mixture to a small oven-safe baking dish. Dollop the ricotta cheese over the top and sprinkle with the shredded mozzarella.
Bake for 12-15 minutes until the cheese is melted and the sauce is bubbly.
Garnish with freshly chopped basil before serving.
